The term gastropub, a portmanteau of "gastronomy" and "pub," was coined in 1991 when David Eyre and Mike Belben took over The Eagle pub in London. Twenty years on, the definition of a gastropub still seems to have a fairly wide range, based on the concept of a refined menu served in a more casual, pub-like setting.

Sang Yoon could easily be the poster child for gastropubs in the U.S. The chef and restaurateur took over Father's Office in Santa Monica over a decade ago, and installed a "definitive bar menu" with his now famous burger. Los Angeles gastropubs are opening their doors at a record clip, and an exciting new crop has emerged in the last year.
